Baked Honey Chicken Dinner

Main Dish:

  • 1/4 cup honey
  • 1 Tbsp. lite soy sauce
  • 1/4 cup olive oil
  • 1 Tbsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  • 4 - 4 oz. boneless, skinless chicken breast halves

Side Dish:

  • 7oz. instant whole grain brown rice
  • 1 Tbsp. thyme
  • 1/2 tsp. pepper
  • 1/4 Tbsp. salt 
  • 12 oz. bag frozen peas

Beverage and Dessert:

  • 1 quart skim milk
  • 1-2 oranges

Less than 30 minutes to dinner:

  1.  Preheat oven to 350 degrees. In a small bowl, combine first six ingredients. Mix well. Brush chicken with halfof mixture and place in oven safe pan lined with foil.
  2. Bake chicken for 10 minutes. Turn chicken and brush with the remaining mixture.  Bake for an additional 10 minutes. Turn chicken and brush with the remaining mixture.  Bake for an additional 10 minutes, or until chicken is no longer pink in center (165 degrees).
  3. Prepare rice according to box directions.  Add thyme and pepper.  Cook broccoli according to bag directions. Add salt.  Combine rice and broccoli.
  4. Peel orange(s). Place orange slices on each plate.
  5. Serve with 1 cup of skim milk for a complete meal.
